The fermentation is made in basins. The decanting in age-old oak and acacia barrels and the pouring back in basins, allow the refinement that will result in the production of a wine with good perfume.
The most complete wine maturation, second phase of the refinement, takes place in the bottle, where the re-fermentation processes are activated, according to the farmer moon methods, that make the wine sweet.
